Girl, you know how I love my pork chops and I just found a new yummy recipe that I had to share! As Project Bikini is back in full effect, I looked up some new WW recipes and this was another low fat, low cal, but high flavor treat! This was spicey, but also fresh and perfect for a summer BBQ!
Ingredients: 1 cup of chopped pineapple, 8 chopped dried apricots, 1 Tbsp green chiles, 1/4 tsp lime zest, 2 Tbsp fresh lime juice, 2 Tbsp chopped cilantro, 1/4 tsp sea salt, 1/4 tsp black pepper, 1/4 ground allspice, 1/4 tsp ground red pepper, 16 oz lean boneless pork chops (4 pieces)
Start by making the salsa in a bowl. Add the pineapple…
…to the apricot…
…to the cilantro. Add the lime zest and lime juice. Then chill.
With the dry ingredients, create a rub for the pork chops. Let them sit for at least 10 minutes.
Throw the bad boys on the hot grill for about 5 minutes on each side (or until done), then serve with the salsa.
This dish will blow your mind…and if not, it will at least satisfy your taste buds!!!
