EASY ROSEMARY SHRIMP

I asked my family to come to dinner last night without a single plan of what I wanted to serve them. I knew I needed to go to the grocery store and that I wanted to try the grill (SUCCESS! I grilled corn and even some steak!!!) and that I wanted something that felt like summer.

We all laugh about the fact that I couldn’t cook worth a lick until I remodeled my kitchen five years ago. I’d open a bag of something, heat it up, and serve it to my guests. Now I really enjoy searching out recipes and trying something new!

I came across a shrimp recipe that just felt right. It only had a few ingredients and required about 6 minutes of cooking…it could even be done in the microwave! That did sound easy!!!

It called for about four hours to marinate and I knew I had the time. I’m so glad I branched out and tried something new because everyone RAVED about it. If you’re in the mood for something summery, easy, and flavorful, you’ve GOT to try this! (It’s only 6 WW points, too!) I served it with a light caesar salad, grilled corn on the cob, steak, buttered rosemary rolls from PW, and sweet potato wedges. It was a great meal.

Ingredients
3 Tbsp light butter, melted
1 1/2 Tbsp rosemary, chopped
2 tsp fresh oregano, chopped
2 tsp basil, chopped
1/4 tsp table salt
1/4 tsp black pepper, freshly ground
2 clove(s) garlic clove(s), minced (medium)
1 1/2 pound(s) shrimp, large, peeled and deveined<

Instructions
Combine first 7 ingredients in a large bowl; stir well with a whisk. Add shrimp; toss to coat. Place in an 8-inch square baking dish. Cover and marinate 4 hours.

Microwave, uncovered, on HIGH 6 minutes or until shrimp are done, stirring after 3 minutes. Yield: 4 servings (serving size: 1⁄4 of shrimp mixture).
