Spring Has Sprung

I love how the sun stays out longer, how colorful flowers are in bloom, and how everyone I seem to know is preggo. The vineyards bubble with activity, neighbors spend more time socializing outdoors, and how my favorite bloggers seem to have a renewed purpose these days. Don't you?!

EMPANADAS…THE FAKE VERSION

On Friday night, I was in the mood for comfort food. I wasn’t sure what I wanted, but then remembered an add I had seen in a magazine for biscuits. I decided the recipe was easy enough and fast enough for a hungry girl.

And it was delicious.

Bread. Cheese. Meat. Salsa.

GOOOOOOOOOD stuff.

If you’re in a hurry, or have picky eaters at your house, this might be just the thing for you to try, too!

Ingredients: Ground beef, taco seasoning, salsa, shredded cheese, Grands flaky biscuits.

To make: Cook your ground beef and add taco seasoning according to directions. Take your first biscuit and stretch it out into a large circle. Layer on meat, salsa, and cheese, then stretch out another biscuit, lay it on top of the mixture and pinch the edges together. Cook according to biscuit instructions.

What you’ll get: Ooey gooey, meaty, yummy comfort food, all in one bite!

    I am going to make this! So easy and I think my kids would actually like it ~ two things that are hard to come by at the same time.
